Stevia Leaf – Stevia rebaudiana
Stevia leaf is primarily used as a low-carbohydrate sugar substitute sweetener. Extracts from stevia, known as steviol glycosides, are up to 300 times sweeter than sugar. The primary compounds that give stevia it’s sweetness are stevioside and rebaudioside. These compounds are heat-stable, pH-stable, and not fermentable. Japan was the first country to use stevia as a sweetener. The United States banned stevia in the early 1990’s unless labeled as a dietary supplement, but since 2008 stevia has been recognized as a safe alternative sweetener.
