What are Cloves?

Cloves are the unopened flower buds of the clove tree, native to the Maluku ("Spice") Islands of Indonesia. The buds are harvested before opening, then dried until they harden into the familiar nail-shaped spice. Cloves are exceptionally rich in essential oil - a single clove contains enough eugenol that it has been used as a traditional dental analgesic (the numbing effect when chewed on a sore tooth is real). Cloves played a significant role in the European Age of Exploration and the Indonesian spice trade.

How to Use Cloves

Culinary: whole cloves in mulled wine, chai, pickling brines, and slow-cooked dishes; ground cloves in baking (cookies, gingerbread, pumpkin pie). Traditional dental: chew a clove against a sore tooth for the eugenol numbing effect, or use clove essential oil (heavily diluted) in oral care preparations. Aromatic: studded into an orange or apple to make a traditional pomander.
